Leyla Osman spent six years on the pastry section of a Manchester hotel kitchen before setting up a registered kitchen just off Eagle Brow, a short walk from the village cross. She bakes in small weekend runs for collection, and her celebration cakes are usually booked about a month ahead.
Everything is made from scratch in single batches — choux baked the morning of collection, caramel cooked in small pans, fruit purees made from whole fruit rather than bought in. Celebration cakes start with a conversation and a pencil sketch before anything goes near the oven.

A flourless torte made with 70% dark chocolate, finished with flaked sea salt — dense enough that a thin slice does the job. Serves ten to twelve.
